I have a lot of leftover caramel from my Bananas Foster Banana Bread and I don’t want to waste it, but I also don’t want to put it in coffee or make something that will go bad super quickly.
So chocolate caramel turtles it is. A turtle candy contains no actual reptiles, but I guess it could look like a turtle. If you squint.
This is a super easy recipe that keeps in an air-tight container and can be customized to whatever your tastes are. You can change the nuts, chocolate type, even the caramel. No matter what, it is good. Chocolate, crunch, and gooey caramel all make a great combo.

The recipe
Equipment:
Sheet pan
Parchment paper
Something to drizzle with - spoon, spatula, whisk
Ingredients:
10 oz Raw Pecan halves / pieces
1/2 cup Caramel (see recipe)
8 oz Chocolate (semi-sweet, or a mix of dark and milk)
Half & Half
Sea Salt*
*This is optional for the top of your turtles.
Steps:
Line your baking sheet with parchment paper and make little piles of pecans. I suggest doing a couple halves partially overlapping.
Warm up your caramel in the microwave for ~30 seconds or until easily stirrable. Drizzle about a teaspoon on your pecan piles.
Let these bad boys cool for a bit on the counter or in the fridge. In the meantime, melt your chocolate in the microwave or in a double boiler.
Drizzle your chocolate over your turtles and then pop in the fridge or freezer to cool. You can leave them out on the counter, but it will take longer to solidify.
Serve or store in an air-tight container after 1 hour in the fridge (or until the turtles are hardened).
